Ingredients


GORGONZOLA CHEESE SAUCE INGREDIENTS

  • 1/3 CUP DRY WHITE WINE
  • 2 TABLESPOONS BUTTER
  • 1 CUP CREAM
  • 3/4 CUP SWISS OR GRUYERE CHEESE (I USED A MIX)
  • 3/4 CUP GORGONZOLA CHEESE CRUMBLES
  • 2 TABLESPOONS SHREDDED PARMESAN
  • 1/4 CUP CHOPPED CHIVES
  • 1/2 CUP CHOPPED GREEN ONIONS

Instructions

In a small, cast iron skillet, heat the oil on high until you see it smoke. Sprinkle one teaspoon seasoned salt on each side of the steak and place in the skillet. Cooking times will vary based on the size of your steak. My steak was about one-inch thick and I cooked it for 3 1/2 minutes on each side. 

When the steak is done, wrap in aluminum foil to let the juices rest.

|| Gorgonzola Cheese Sauce || Turn the heat down to medium-low, and with the same skillet, carefully pour in the white wine. This will release all the good drippings from the steak. Add the butter and cream, and mix until combined. Slowly add all the cheese and continue to stir. Once the cheese has melted, add the chives and remove from the heat. Taste before adding salt if needed.

Cut up the steak into small pieces and sprinkle over the Deep River kettle chips. Pour the cheese sauce over the steak and potato chips and sprinkle with the green onions.
